What the morning covers
Three courses from the open binding, cooked properly rather than demonstrated: the aromatic that carries the dish, the technique the original assumes you already know, and the substitution that makes it possible now.
You eat what you cook, at the table, with the book open beside you.

Taking a place
Eight places, Saturdays from 09:30, finishing before lunch service.
- £140 a place, including everything cooked and drunk.
- Classes follow the current binding, so the subject changes every three weeks.
- Places are held by email; there is no online booking.
