Wynn pours to the era of each binding, and will not pour from a domaine he has not visited.

Poured to the era
The Leyel binding leans on the German and Austrian whites Hilda Leyel herself drank. A 1747 binding will not. The list moves with the shelf, which is the point.
Wynn came from the floor at The Square and the buying desk at Berry Bros. The pairing runs to £125 alongside the nine courses.

Without the pairing
There is always a short by-the-glass list and a non-alcoholic reading built from the same herbal — infusions, verjus and shrubs made in the kitchen, at £55.
